Red Velvet Cake
- Preheat oven to 350 degrees.
- Grease 2 pans that are 2 inches and round.
- Mix shortening and 1 1/2 cups of sugar together until it is smooth.
- Beat eggs into the fluffy batter.
- Make a paste from cocoa and red food coloring. Add it to the batter.
- Then mix little salt, one teaspoon of vanilla, and buttermilk together.
- Add flour to the batter.
- Alternate between the flour and the buttermilk mixture until the batter is a good consistency.
- Add soda and vinegar to the batter. Fold it. Do not beat or mix.
- Pour the batter into the pans. Then put them into the oven. Bake it until it is fully baked.
- Let them cool on wire racks.
Frosting
- Put 5 tablespoons of flour and milk until it is thick. Stir constantly.
- Let it cool and beat 1 cup of sugar with butter and 1 teaspoon of vanilla extract till it is light and fluffy.
- Add the cool flour mixture. Beat until it has a good consistency.
- Frost the cake when it is fully cooled.
- Add desired toppings.

Chocolate Cake
- Preheat oven to 350 degrees.
- Grease 2 9 inch pans.
- Mix baking soda, baking powder, cocoa, sugar, flour, espresso powder, and salt together in a bowl. Until it is combined well.
- Add eggs, vanilla, milk, and vegetable oil into the mixture. Mix on medium speed until combined well.
- Reduce speed and add boiling water to the batter. Mix until well combined.
- Separate the batter into the 2 pans evenly.
- Bake until a toothpick inserted into the center of the cake comes out clean.
- Cool completely.
Frosting
- Add cocoa to a large bowl. Remove lumps.
- Mix butter with the cocoa powder. Make sure it is well combined.
- Add 1 cup of sugar to the mixture. Then add 1 tablespoon of milk. Mix on high speed for 1 min.
- Repeat until all sugar and milk have been added.
- Add vanilla extract and espresso powder to the mix. Combine good.
- If it is to dry add more milk, by the tablespoon until it is just right. If it is too watery, then add sugar until it is the right consistency.
- Frost the completely cooled cake.
- Add desired toppings.
Vanilla Cake
- Preheat oven to 350 degrees.
- Grease a pan.
- In a bowl mix sugar, butter
